Carrot Flan

Pastry:

8 oz flour
4 oz butter
1\2 tsp salt

Filling:
1 lb young carrots, boiled and mashed
2 egg yolks
1\3 cup reduced cream
4 tbsp grated cheese

Method:
1. Make shoptcrust pastry. Roll it out and line a 20 cm (8 in) flan tin.
2. Bake 'blind' in a preheated oven at 150C for 20 min.
3. Beat mashed carrots, yolks, cream, cheese and spices.
4. Spoon the mixture into the pastry case. Bake for about 30 min until the filling is firm.
Serve warm or cold with salad.
