Цельнозерновой хлеб  
8 oz plain flour
8 oz wholemeal flour
2 tsp salt
1 tsp dried yeast
13 fl oz (350 ml) lukewarm water

1. Mix the flours, salt and yeast.
2. Make a well in the flour and add the water. Mix with a wooden spoon, then knead the dough until elastic and smooth (about 10 min).
3. Leave the dough in a warm place until doubled in bulk.
4. Punch the dough down and leave it for another hour or two.
5. Preheat the oven to 220C (425F).
6. Knead the dough lightly for 3 minutes to form a loaf. Leave it in a warm place to prove.
7. Bake for 35-45 minutes.
